Most popular dishes of lockdown 2020

Street food lovers were the most distraught ones during the lockdown, especially those who are hardcore pani puri lovers. Many people satiated their gol gappa cravings by making them at home.

With all our go-to pizza joints closed, homemade pizza was the only solution to our cravings.

Another street food that most of us missed was the crispy hot samosa. So, why not try them at home? Just prepare some potato stuffing, roll out the dough, fill the stuffing, give the shape of a samosa and fry.

The combo of Samosa and Jalebi makes the perfect pair. Hot and syrup loaded jalebis were another dish that most people tried at their homes

Also known as Zebra Cake, Marble Cake was another popular dessert during the lockdown. It was basically made by combining two different coloured batters in such a manner that the end result looks like marble

Apple-Cranberry Coffee Cake Wreath

I’m not an expert at shaping dough into wreaths or much of anything else but this is a wonderfully delicious & rather festive wintry coffee cake.

A great weekend baking project.

INGREDIENTS for dough

¾ cup (200 ml) milk
¼ cup (50 ml) water
2 ¼ teaspoons (8 grams) active dry yeast
¼ cup (50 grams) sugar
¼ cup (60 grams) unsalted butter, softened to room temp
1 egg
½ teaspoon ground cardamom
½ teaspoon salt
3 ¼ - 3 ½ cups (485 – 520 grams) flour

INGREDIENTS for the filling *
4 pie apples, like Reine de Reinette or Golden, peeled, cored & cubed
1 cup fresh cranberries
2 tablespoons (30 grams) unsalted butter
6 tablespoons brown sugar
½ tsp ground cinnamon
1/8 tsp ground cardamom

Egg wash: I egg beaten with 1 tablespoon water

You can increase the filling by using 5 apples and 1-½ cups cranberries; just be careful rolling it up to keep the filling inside the dough.

Make the dough:

Mix the water & milk together in a small saucepan & heat gently until warm, not hot. It should be the temperature of your hand when you test it.

Put the yeast in a large mixing bowl. Pour about ¼ cup (65 ml) of the warm liquid over the yeast and stir

Okay, last night’s gnocchi recipe in one single Instant pot:
You’re gonna need gnocchi. I happened to have some that I rolled a while back, hanging out in the freezer. It’s cold mashed potatoes, flour, egg. Simple. But also, store bought is FINE!

Boil them JUST until they float. That’s, like, long enough to get out the rest of what you’ll need.

When the little potato dumplins float, scoop then out gently with a wire strainer like this one, and place them in a colander you’ve sprayed with cooking spray. They are sticky.

Pour out the gnocchi water except dor about the last cup and a half, the really cloudy bit. Set it aside. I use a yeti tumbler so it stays hot. You’ll need it later.

Don’t mistake ‘tater water for a hot beverage, though.

Get your instant pot back on the low-low setting, and put in a goodly-but-not-scary amount of butter. In this case, a teaspoon. Then another teaspoon of duck fat. (Or just a bigger scoop of butter if you don’t have duck fat).

The duck fat I used is from Fatworks:

To that, add a cup of whole milk, or if you’re me, a cup of 2%, and a hearty splash of half and half otherwise intended for your coffee creamer.

Now comes the thawed drained spinach. You want to press out all the green-brown water, and plop that whole block in:

First broccoli cheese soup of the new year. I’ve made a pot almost every week since the pandemic started. Maximum comfort food.

I don't follow a recipe, I'll try to recreate what I do here.

3 heads of broccoli
1 onion
1 box container of chicken stock
1 cup of milk
2 tbls flour
block of sharp cheddar
salt/pepper/tsp mustard powder

Chunk up the cheddar and whiz it in the food processor. You want it to be little bits that will melt fast. I've tried using pre-shredded, but I think they put something in it to prevent caking and it makes a grainy cheese sauce.

Chunk up one of the broccoli heads and whiz it up.

Rough chop the remaining broccoli into bite size pieces.

Chop up the onion.

Prep the ingredients for the cheese sauce (two tablespoons flour, salt & pepper, mustard powder) in a little bowl so you can dump them in when needed.

OK, you want everything prepped ahead of time because the timing here is a little tricky (for me).

Sauté the onion in olive oil in a large pot. Once it's softened add your whizzed up broccoli (I like it to get a little toasted, I think it adds a nice flavor).

On digging a beautiful Vigraham of Murugan was found, but lower portion was very rough. So he called a great sculptor to soften it. Everyone was shocked to see that on the first chisel the vigraham bleeded.

Now, the doctrine of devotion we shall expound.
After having developed all the qualifications necessary for the practice of devotion (atha), the student

feels no spiritual satisfaction, and therefore (ataḥ), he must now diligently walk the path of devotion. According to Rāmānuja, the teacher of viśiṣṭādvaita, there are seven qualifications necessary in a seeker who plans to pursue devotion. They are:

Funny, before the election I recall lefties muttering the caravan must have been a Trump setup because it made the open borders crowd look so bad. Why would the pro-migrant crowd engineer a crisis that played into Trump's hands? THIS is why. THESE are the "optics" they wanted.

Funny there are those who think these migrant caravans were a FANTASTIC idea that's going to take the immigration issue away from you.

This media manipulation effort was inspired by the success of the "kids in cages" freakout, a 100% Stalinist propaganda drive that required people to forget about Obama putting migrant children in cells. It worked, so now they want pics of Trump "gassing children on the border."

There's a heavy air of Pallywood around the whole thing as well. If the Palestinians can stage huge theatrical performances of victimhood with the willing cooperation of Western media, why shouldn't the migrant caravan organizers expect the same?

It's business as usual for Anarchy, Inc. - the worldwide shredding of national sovereignty to increase the power of transnational organizations and left-wing ideology. Many in the media are true believers. Others just cannot resist the narrative of "change" and "social justice."
