Turkey & Ham Croquettes (a la Monica)

Make sure you know how to DEEP FRY before attempting this recipe. Be safe. Wear oven gloves and long sleeves
when dropping/removing croquettes into/from the hot oil.

First, take off all the bits of white and brown meat from the turkey. No cartilage bits or fat. Crispy skin is fine.

With the ham, cut off a few lean pieces.

Shred both meats to small, crumbly bits in a Magimix. There will be a large mound.

Leave aside.

Now, make a Béchamel sauce that will bind the bits together
First, make a ROUX: microwave a quarter of good butter (not marge or spread) and into
the liquid butter add plain flour and beat slowly with a spoon until you get a soft paste. Season lightly. You now have your ROUX.

Put half a pint of good quality WHOLE milk in a saucepan.
Now, heat your whole milk *gently*, add some black pepper and IF you want cheese: grate in
some blue cheese/cheddar/Gouda into the milk. (I love blue cheese! - stilton etc)

Add a teaspoon of the ROUX paste and keep stirring with a (non electric) hand whisk, to soften the roux into the milk.
Keep adding teaspoons of the roux until the milk mixture starts to thicken.

Bash any lumps until you have a smooth cream consistency. (strain out any lumps).

I am reading and reviewing books of @SamHarrisOrg this December, with the extra time available after work. First book I read is following.

The book is written by the neo-atheist Sam Harris. I am a passionate sunni Muslim. I would like to learn and review some of his work, and judge them from my personal view based on Islamic theological perspective. It shall be interesting because as you would know, the neo-athiests

want to abolish religions altogether and suggest a world where things are based on science and logic. How is that coherent and how is it relavent? Let's see for ourselves. I would like to thank the local Muslim handles and atheist handles who actively participate in discussions.

I would advice everyone to stick to a more academic discussions and not to deviate the discussion with mockery of Islamic and atheistic beliefs.

This book talks about lying and it's ill effects on the individuals and at large on the society. In a nutshell here are some of the gists of the book. The book basically identified specific ways in which lying is detrimental and why we should avoid lying.

Something I have been asked a lot in therapy sessions late is this - "I feel unstoppable physical sensations when I am anxious & this has gotten worse during the pandemic. Why does this happen?"

Here is a primer for comprehension—

Anxiety & fear are both part of our emotional landscape. Neither constitutes a pathology. Anxiety has its own uses in survival. The chief difference is that fear is when you are grasping with a known or certain threat & anxiety is usually an unknown or certain threat.

Therefore, confronting a fear can, in most cases, be a more direct, tangible process whereas anxiety-inducing stressors can be more shadowy or repressed leading to ongoing aftershocks from time to time. Over a period in time, anxiety can turn into a generalised response to fear.

While there are some (debatable?) biological/neuroschemical markers for anxiety, a lot of it is due to psychosocial causation. If you grew up in a family where attachment & trust were patterned on insecurity & self-doubt, it is likely that you feel anxious about relationships.

Repeated anxiety --> worrying. It shows up as physical signs including palpitations, sweating, the feeling of a knot tightening in your stomach, your ears getting warmer among a host of other bodily discomforts. It is cyclical. Worrying, ironically, becomes a coping mechanism.

When my ovaries failed prematurely & I suffered full force of absence of hormones on body & mind 1 thing which struck me was total lack of discussion in feminism about what was happening to me. I realised feminism had v little to say about loss of ovarian function in general

What I could find were lectures on accepting this loss of function & its devastating panoply of mental & physical impairments because it was “natural”. These lectures were usually delivered by older women, younger feminists had nothing to say. I presumed it prompted the ick.

Which is how society in general responds. It wants you to shut up, stop being so hysterical. Accept your lot! Despite premature ovarian failure, & appropriately timed menopause, intersecting with class to deliver an absolute gut punch of inequality.

When I talk about this stuff on here I get very little engagement. Feminists are no more likely than the general population to have an interest. Men are wont to respond with what I presume is disgust & just hope you stop talking about it as soon as possible.

You don’t get star columnists or high profile QCs jostling to take on the cause of women who face a life of premature morbidity & even premature mortality as well as exclusionary social effects because their ovaries packed up early doors & the NHS provides v limited care.

Post Independence, Army wanted to select the most experienced Indian commander as Army chief. But Nehru without consulting anyone appointed Gen Rob Lockhart, a senior British Army officer as the Commander-in-Chief (C-in-C) of the Indian Army.

1/ I get questions frequently from people who have heard the SOS say that the BMD QR code ballots can be audited to tell who won. I'll explain why he is wrong.

Your BMD ballot vote is stored in the barcode. The text doesn't count. The computer reads only the QR code.

2/ The printer is supposed to print a candidate's name that matches what you entered on the touchscreen and what you hope the QR code symbol stands for. But you don't know whether the name matches the QR code.

So you really don't KNOW who you cast your vote.

3/ That can be overcome IF two unlikely things happen:
--every voter thoroughly and accurately checks before scanning to be sure that the printed list reflects his choices. (Hard to do, to remember all the contests), AND
--there is a thorough post election audit.

4/ Reality --very few people check their ballots before scanning. Therefore those are untrustworthy source documents for auditing.

If you pressed the screen for candidate Sam, but the printout & QR code said "Mary," and you didn't check, then your Mary vote was not intended.

5/ But auditors would never know that you pressed screen for Sam. The official record says Mary. The bug that changed your vote goes undetected. No one knows that your vote was recorded wrong.
